Your Legal Requirements. From 1st January 2006 The Food Safety (General Food Hygiene) Regulations 1995 and the Food Safety (Temperature Control) Regulations 1995 were replaced by: ·         The Food Hygiene (England) Regulations 2006 ·         The Food Hygiene (Wales) Regulations 2006 ·         The Food Hygiene (Scotland) Regulations 2006 ·         and the Food Hygiene (Northern Ireland) Regulations 2006. These all refer to Regulation (EC) No 852/2004 of the European Parliament and of the Council of 29th April 2004 on the hygiene of foodstuffs. The regulations ensure that all food intended for human consumption is safe to eat - "every food business operator along the food chain should ensure that food safety is not compromised". The main new requirement is that businesses must be able to show what is done to make or sell food that is safe to eat and must have this written down Its very important that anyone who works where food is made, prepared or sold has a good understanding of food hygiene, even if they do not handle food.
